It’s been a challenging year for non-alcoholic (NA) bars. Since 2024, at least three NA-only bars have shut down in Los Angeles or transitioned to online retail-only operations.
Shifting Landscape for NA Bars
The initial excitement surrounding openings like New Bar in Venice and West Hollywood has subsided, and the themed events at Stay Zero Proof in Chinatown have ended. Some industry observers suggest these bars were, in a way, victims of their own success.
They played a key role in popularizing non-alcoholic drinks, which are now widely available from big-box retailers, often at lower price points. This increased accessibility has impacted the unique appeal of dedicated NA bars.
Adapting to Survive
To remain competitive, NA bars are evolving their offerings. Some are focusing on creating “third spaces” – community hubs offering games and entertainment. Others are adding vegan and allergy-free food options to attract a wider customer base.
Dean Peterson, who runs Burden of Proof in Pasadena, notes that the trend of “Dry January” is fading, with customers embracing reduced alcohol consumption throughout the year. “I think it kind of spreads throughout the whole year, just a kind of lifestyle versus like a 30-day [period],” he said.
The Importance of Experience
Stay Zero Proof, opened in 2024 by film set designer-turned-interior designer Stacey Mann, closed last year despite its appealing atmosphere and high-quality cocktails. Mann noted that the bar attracted more “sober curious” patrons than those actively in recovery.
“It did not bring in the sober crowd… It's the cost, it's the idea that a lot of sober people aren't really thinking about sitting in bars,” Mann explained. She emphasized the importance of a unique experience, even with exceptional drinks.
Beyond Alcohol-Free
Successful NA bars are prioritizing experiences beyond simply offering alcohol-free beverages. Kavahana, a Santa Monica spot featuring kava root-based drinks, hosts events like open mics and comedy shows.
“These are different activities that I think are really important to having a brick and mortar, that maybe a traditional bar doesn't really need to do,” said Kavahana co-founder Neil Bahtia. Free Spirited in Alhambra combines a 0.0% alcohol experience with vegan and allergy-friendly food options.
Craft Cocktails and Atmosphere
Bar Nuda’s owner, Pablo Murillo, is focusing on innovative, craft non-alcoholic cocktails. He believes customers are seeking unique flavors beyond simple non-alcoholic versions of traditional drinks. Leena Culhane, owner of Force of Nature, emphasizes the importance of creating an “adult experience” that feels special and celebratory.
As the market evolves, NA bars are recognizing that a great mocktail alone isn’t enough to thrive. Providing a well-rounded experience and catering to diverse customer needs are crucial for success.
