Colossus Harbor is the third venture from Kristin Colazas Rodriguez, who initially launched Colossus Bread in 2019. She followed with a Long Beach location in 2021. Growing up near San Pedro, Rodriguez began selling her baked goods at local farmers markets before opening her first brick-and-mortar bakery on Alma Street in 2019.

The Harbor location is more than double the size of the original, featuring a full restaurant and a superette stocked with grab-and-go bread, pantry staples, books, merchandise, and wine. Rodriguez’s passion for bread, honed at renowned kitchens like Osteria Mozza and Crenn, remains central to the concept.

Breakfast highlights include a croissant roll filled with a fluffy egg cloud and melted Muenster cheese, praised as one of Los Angeles’ finest croissants. Lunch offerings feature signature sourdough sandwiches, such as the Mary’s organic chicken Caesar salad sandwich and the standout mushroom dip, featuring Long Beach oyster mushrooms and a horseradish cream.

Dinner: Italian American Pizzeria

Evenings bring an Italian American-inspired pizzeria experience. Sourdough bread scraps are creatively incorporated into dishes like meatballs and gnocchi. The restaurant also offers a curated selection of natural wines from the Mediterranean region, available for an additional corkage fee.
